Ingredients and Tools You’ll Need
Here’s what you’ll need to bring this recipe to life:
Ingredients:
- Cake:
- 2 cups sugar
- 1 cup shortening
- 1 tsp Adams Best Vanilla
- 1 tsp Adams Butter Flavoring
- 6 eggs
- 2 cups sifted flour
- 1 tsp salt
- 1 can angel flake coconut
- Coconut Glaze:
- 1 cup sugar
- 1/2 cup water
- 2 tsp Adams Coconut Flavor
Tools:
- 10-inch pound cake pan
- High-speed electric mixer
- Small pot for glaze
- Oven mitts
- Baking brush
Directions: Let’s Make Some Cake!
Step 1: Preheat and Prepare
Start by greasing your pound cake pan with a layer of butter, then dust it with flour. This helps keep the cake from sticking and gives a beautiful crust. Set the pan aside and preheat your oven to 325°F.
Step 2: Cream, Mix, and Blend
Using a high-speed electric mixer, cream together the sugar and shortening until smooth. Then, add in the Adams Best Vanilla and Adams Butter Flavoring for that extra layer of flavor that makes this cake unique. Next, blend in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
Step 3: Combine Dry Ingredients and Fold in Coconut
Sift the flour and salt together, then slowly add them to the wet mixture. Once combined, fold in the angel flake coconut. The coconut adds texture and a tropical twist that makes this pound cake so special!
Step 4: Bake It to Perfection
Pour the batter into the prepared pan and bake for about 1 hour and 20 minutes. To check if it’s done, insert a toothpick into the center. If it comes out clean, the cake is ready! This test is a classic technique—what are your go-to methods for checking if a cake is done?
Step 5: Prepare the Coconut Glaze
About 5-10 minutes before the cake finishes, start on the glaze. In a small pot, mix together 1 cup of sugar, 1/2 cup of water, and 2 tsp of Adams Coconut Flavor. Bring it to a boil, and allow it to boil for 1 minute before removing from heat. This glaze will add a sweet coconut crust, enhancing the flavor in every bite.
Step 6: Glaze Options for That Perfect Finish
For a crispy, hard glaze crust, brush or pour the glaze over the hot cake while it’s still in the pan. Return it to the oven for 5 minutes (no longer) to set the glaze. For a softer finish, remove the cake from the pan immediately and brush on the warm glaze with a baking brush.
Serving Suggestions and Alternatives
Serve your coconut pound cake as-is, or try it with a dollop of whipped cream or a scoop of vanilla ice cream. If you’re not a fan of coconut, swap it out for almond flakes or a hint of citrus zest for a new flavor profile!
